How To Cook Pongee

Yesterday fishing was real slow in the evening. Only caught 3 peacocks and this 22" pongee. I've heard they are good eating so I scaled it, cut off the fillets. My father-in-law said to rub salt & vinegar on the skin, which I did, then froze it in water in zip lock bags. Anyone know how to prep pongee for cooking? THanks.

It's a delicacy in China, so I would check out a few Chinese food restaurants to see if they have anything. Or maybe search the web focusing on Chinese food.

Use any white fish recipe like Mahimahi recipes. Last time I had Pongee I tempura batter fried da buggah, and it was ono. :wink:

We used to make soup with pongee. It is supposed to give you vitality when you eat it. I think the argument is that it is very high in protein.

Never had it any other way other than soup.
